Makes one 9x9 square cake (or two smaller rounds).
Announce that spring is here with fresh flowers and strawberries! This delightful cake is rich in protein and low in allergens. It perfectly decorates an afternoon tea and shines at a rustic, country wedding - providing beauty for your eyes and your taste buds!
It’s so simple to make - in fact, it can be mixed in your blender! And get this, it’s Gluten-Free, Grain-Free, Dairy-Free, Nut Free, and Refined Sugar-Free! You’ll be surprised at how tasty it is.
1.Using a high-powered blender, whip the eggs. (Or whip by hand in a large bowl). Add the remaining ingredients and blend until smooth. Pour into a greased cakepan.
2.Bake at 325°F until a fork comes out clean - approximately 30 min (or 25 for two smaller rounds).
3.Cool before decorating. Top with Coconut Whipped Cream, Strawberries, and pretty flowers.
* Make your own beans - they taste even better! Soak 2/3 Cup of beans overnight, rinse well, and cook according to the instructions on the package. Butter Beans or White Navy Beans taste the best.
I found myself wondering if there was a better way to care for my skin and health?
Years earlier, I was working in the cosmetics industry – and I LOVED it! I had access to all kinds of makeup, perfume, lotions and potions.
I had blotchy skin, acne, and rashes – but cosmetics allowed me to hide it all. And medications cleared up the problem (or so I thought). I didn’t care what ingredients were used, as long as it worked. Makeup and medications made me feel beautiful.
Over several years however, I started developing skin sensitivities and frequent headaches. I remember this one day in particular when my eyes started to swell. Another day my ears puffed up! (I look a little like Dumbo). And there were always strange rashes appearing on my body.
The young all think they’re invincible, but my health declined instead of improving.
Before long I began questioning things. Was it actually possible, was in in fact true that our skin might actually absorb what we slathered on it? As my health fell apart, I was forced to take a deeper look:
Was there a better way to find beauty, without it affecting my health?
I took a break from working with cosmetics and started researching healthier options. In desperation I tried a holistic diet and natural skincare products.
In less that 30 days my skin started clearing up and my headaches were gone! I even lost extra weight and I felt amazing.
I don’t know why it surprised me. I guess I was in such deep denial that conventional beauty products and junky foods weren’t actually affecting me. It was easier to remain in ignorance, but it was affecting my health.
But now that I’d tasted freedom and healing – and I wanted more.
